Cajun Crappie Recipe

My brother just got back from a fishing marathon. He went fishing three weekends out of four. Some might think this is a little extreme, but I am thinking FREE FISH. I was searching the web for some good crappie recipes and came across this great recipe! Cajun Crappie! Perfect! I found this Cajun Crappie Recipe on FishHuntExplore.com. I will let you know how it turns out.

Ingredients:
1 lb crappie fillets
1/2 cup milk
1/2 cup flour
2 eggs
1 cup cornmeal
1 tablespoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
Cooking Instructions:

Step 1: Mix together flour, eggs and milk in a bowl. In another bowl mix together corn meal, Cajun seasoning, salt, and pepper.
Step 2: Dip crappie fillets in the wet mixture to coat and then roll in the dry mixture.

Step 3: Fry fillets in oil on both sides until both sides are golden brown or until fully cooked.
Pineapple Salsa Recipe

Ingredients:
1 can pineapple chunks
1 onion (diced)
1 Red bell pepper (diced)
1 Green bell pepper (diced)
1 teaspoon cayenne pepper
2 tablespoons coriander leaves (chopped)
1 tablespoon lemon juice
1 jalapeno pepper (optional)
salt (to taste)
Cooking Instructions:

Step 1: Combine pineapple, red bell pepper, onion, and green bell pepper in a bowl and mix.
Step 2: Add in cayenne pepper, coriander leaves, and lemon juice. Mix well. Let refrigerate until ready to serve.
Cajun Catfish (Broiled)

The big fish fry is scheduled for 5/16/2008. Boy am I excited! I am also thinking about making a more healthy version that I found on myrecipes.com. It takes a different approach by broiling the fish. The pictures look great! I will let you know how it works out.

There's no better fish to showcase the spices and flavors of Louisiana's bayou country than catfish. Slaw and sliced tomatoes make great go-withs.
Ingredients:
4 (4-ounce) farm-raised catfish fillets
1 tablespoon fresh lemon juice
4 teaspoons Cajun Seasoning
Vegetable cooking spray
Lemon wedges (optional)
Preparation:
Brush both sides of fillets with lemon juice, and sprinkle with Cajun Seasoning. Place fish on a broiler pan coated with cooking spray, and broil 5 minutes on each side or until fish flakes easily when tested with a fork. Serve with lemon wedges, if desired.
Yield:
4 servings (serving size: 1 fillet)
